Shrimp with Tomato Sauce
1⁄4 cupToasted Onion
1⁄4 cup diced red bell pepper
1 tbsp Souvlaki Seasoning
1 can (28 oz /796 ml) diced tomatoes
1 lb (450 g) pre-cooked, frozen and peeled shrimp, thawed
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
Toppings (optional): crumbled Feta cheese.
- In Multipurpose Pot, combine first 4 ingredients and simmer for 10 minutes with lid off. Sauce will thicken slightly.
- Lay thawed shrimp on paper towel to remove excess moisture. Add shrimp to sauce and cook for 2 minutes or until shrimp is heated through.
- Season with Sea Salt and Pepper.
- Serve over steamed rice or with your favourite cooked pasta. Top with a little crumbled Feta cheese if desired.
